Algarve Recipe Website Creating a Stir

The basic materials of Algarve cooking are the unique ingredients which are available along the southern sun-drenched coast of Portugal.
Olive oil, garlic, onions, tomatoes, basil, peppers, coriander and parsley are the typical base ingredients for any Algarve sauce. "In Portugal we tend to use a lot more olive oil than in the UK" comments Rute Oliveira from My-Algarve. "By more I mean we use a larger quantity of olive oil in each sauce base. Also we tend to use a lot more salt which is not the case in the UK".
The vegetables of the Algarve can be picked up fresh all year round as many are grown in greenhouses during the winter months. Winter temperatures in the Algarve are similar to those of late spring in the UK, and there is a lot more sunshine. It is not unusual to have an uninterrupted week of sun in winter with temperatures peaking at around 17 or 18 degrees centigrade, which is good for growing many tender herbs and vegetables.
There is also a plentiful supply of fresh fish from the Atlantic, so many Algarve dishes are based on seafood.
