This is because new guidelines have forbidden the use of some additives and preservatives.

The moon cakes are considered a delicacy amongst those living in the East, and are usually offered to friends and family whilst celebrating the lunar festival. These specialist cakes are often devoured whist carrying out the lunar worship and watching, which is one of the most important celebrations in Chinese culture. The cakes themselves symbolise family unity and perfection.

In previous years in China the moon cakes would usually start being sold in the marketplaces and supermarkets around early July. However, this year the specialist cakes were not available to buy from retailers until a month before the festival. This was due to investigations into the ingredients these cakes are made from under a new national regulation of Food Additives Using Standard, which was bought into place in late June. Due to these new, tighter regulations it is now prohibited to include 27 of the former additives which would have usually been found in the moon cakes.

Ingredients which are no longer allowed to be used in moon cakes include calcium peroxide, and ammonium sulfate which are both used to whiten the flour, as well as the use of colouring and preservatives has also been limited. Because of this, it means that now the cakes will not be preserved for as long as they would if they contained the various additives. Therefore this is the reason the production of the moon cakes has been pushed back to a later date than in previous years. Due to the substitute ingredients the new and improved moon cakes will now need to contain, the cost of the moon cakes has increased by around 10-20 per cent.

Most mooncakes are round or rectangular in shape, and are approximately 10cm wide. They usually contain a thick filling which is made from a specialist lotus seed paste. This filling is encased in a 2-3mm crust, which may also contain yolks from salted duck eggs. The moon cakes are usually cut into small sections, and are washed down with Chinese tea. In modern day society, in addition to people sharing the cakes amongst friends and families at personal gatherings, businessmen also offer the cakes in tins with traditional Chinese designs to clients as gifts.
