I grew up with home-made Mexican food, and at it's core, Mexican food is a group activity – an excuse for Families to get together around the table and share stories and laughter. It feeds your need for contact, it warms and soothes you inside, and helps in its own way to make you feel more fullfilled.

Unfortunately, Mexican cooking shows and cookbooks frequently make the actual act of cooking the food as complicated as possible! Exotic dishes, requiring multiple pans, special sauces, and an unrealistic level of preparation.
Busy, time-crunched families who might love Mexican, thus are put-off from trying to make it at home due to not having the energy or time. If they continue to pursue Mexican, they often end up at a chain-restaurant, eating mediocre meals that bear little resemblance to the food in Mexico.
And Thus I created the "Everyday Mexican Cookbook"

This cookbook aims to make Mexican Food simple, fun, and quick. Many of the recipes are prepared from leftovers or require only 1 item to be cooked. While sauce recipes are given, substitutes (from a can) can be used to speed up the results.
But most of all, it aims to get the family back together in the kitchen, pitching in to help make dinner and set the table. It gets the family together at night, and provides simple recipes anyone can make that provide the maximum effect for a family getting together.
