Fragrant wood Smoke is rising in Ladeira do Vau now that John Ketley (formerly of Fumeiro do Algarve) is situated in As Aves Restaurant

(Free-Press-Release.com) August 4, 2010 -- Using the finest raw ingredients, John smokes all his own produce in the traditional manner, firstly salting - using Organic salt from Tavira, then smoking using wood chippings from a Port Barrel Maker in Porto.

His motto is that he will smoke anything but cigarettes! He has smoked produce for the Gastronomique Chefs of the Algarve and sent his first ever side of Algarve Smoked Salmon to the British Ambassador up in Lisbon, almost 18 months ago.

Now, he wants people to come along and see what he does, try his produce in the restaurant or take away to eat at home. His wife, Sue and two of their daughters, Kirsty and Olivia, and Kirsty's partner Stephen, are joining him in this new venture - they took over mid July and their innovative menu is mainly based on their own smoked produce. Whilst in the UK their passion for quality food over the numerous years in the restaurant industry gained them various accolades along the way.
So whether you want lunch, coffee and home made cake or just to chat with John over a beer about what he does, then go along and see them. Their opening hours (for the summer) are Tuesday – Friday 9.30am -3.30pm; Saturday 9.30am – 1.30pm and Sunday lunch on the first Sunday of each month - but from September, they will be open every Sunday!
