The traditional Mexican mortar and pestle is a culinary delight that should extend itself north of the border. Because of its porous volcanic or basalt surface, when grinding a mix of ingredients, their flavors tend to be better preserved than when minced in a blender. For a large fiesta however you’ll need a large molcajete. This bigger Mexican bowl can support more ingredients and save you from having to make 2 or 3 different grinds.
A large molcajete will usually be bigger than 9 inches in diameter, 5 inches tall and 3 inches deep. They will also weigh more; about 10 pounds or more. Some large molcajete even look as if they were carved using jackhammers, weighing above 40 pounds. There are of course leviathans chiseled by excavators and hauled into place by dump trucks. But for your social event or family dinner, we suggest you stick with 30 pounds or less.
With a nice hefty depth, it will take some time until people see the bottom of a large molcajete. And that is all you really want, because when it comes to cleaning your large molcajete, it will feel as if you are cleaning a fish tank. It won’t be as hard though, because all you really have to do is clean it with warm water and rinse. There is no soap to be used even on a large molcajete, for you will then be passing a soapy seasoning to your next sauces and guacamole. You don’t want that to happen at all.
Though it is not commonly used as a cooking tool per se, large molcajete can also be used as a saucepan to heat food over an open fire or on a stove top. The volcanic and basalt rock compositions from many large molcajete are great as heat insulators, which will preserve any foods warm temperature long after it has left its heat source. Just remember not to do this with the lesser materials from which other large molcajete are built out of; plastic doesn’t really tend to stay rigid under searing environments. Before you get down to experimenting with your large molcajete have an idea what to do if something goes wrong. Or else, you don’t don the experimenter’s role!
