Up untill the early 19th century Lobster fishing was done by gathering lobsters off the shore or lined by hand . Lobsters were used as fertalizer for farm crops because of there high nitrogen content .The only humans who consumed lobster had been indentured servants , prisoners and children . There became a time when servents rebelled calling this harsh punishemnt inhumane and demended to have there labor contracts re-written so lobsters could not be served to them more then 3 times a week The verdict was that having lobsters fed daily in whatever fasion it was they were being fed was indeed ruled and act cruel and unusual punishment .
The trapping of lobsters started off the coast of Maine about 1850 . As of today Maine is the largest lobster industry in the nation. The amount of lobster men fishing in todays age compared to the amount that fished 20 years ago catch much less per average although the industry is still strong , for many reasons the enconomy is not , and only a small number of the population can actually afford to eat lobsters as much as they would like .

The creation of the lobster pound which is a large lobster holding facility was first established around the year of 1875 . A lobster pound is a way to hold the lobsters while they grown into a hard shell or untill a price becomes more ideal for reselling the lobster . Simular to the stock market the key is to buy low and sell high. Untill the 1930s lobsters got bought and moved by boats that where known as "smacks" . In the 1930s land buyers replaced the smack men . The lobster buyers purchased directly from the lobstermen who in return bought fuel and other needed items for there business at a local wharf . Those buyers would then generally sell to regional buyers for sales to the public . This part of the business has not changed much and a the largest percent of lobsters sold are done this way .
Also in the late 1800 around the times of the first pounds , the lobster canning industry first evolved . The Burnhams & Morill company was one of the first lobster canning companys in Maine . B&M which is still a world wide baked been distibutor was also a lobster cannery When it first begun it was noted that a 2lb lobster was considered small and a 4lb lobster was an avergerage size . It took only about 20 years of this method of canning before it was need to stuff shorts , lobsters under 1 pound into the cans.

Maine has always been a complicated place regarding rules and regulations for was regarding any kind of agricultural industry and with little sold grounding economically for years we have had to sell up to 75% of Maines entire lobster catch to Canada to be processed . The good news is things are changing and more is now going on with in the state of Maine . Legal right for distibutors and retails to sell whole claws instead of just having to use this part of the lobster for lobster meat only is one action that has been made.There are still problems needing work for sure. History is a big part of knowing what really makes a difference . One thing is for sure even in the year 2011 if you are looking for a crate or two of of 3 to 4 pound lobsters from Maine you might be looking for a while.
