Hughes went veggie over twenty years ago. “When I was first introduced to vegetarianism, it took me three tries over eighteen months, but I managed to let go of milk, beef, pork and chicken. I still have a long way to go with other dairy, seafood and eggs, but it’s a start. Meanwhile, my body just plain feels better. Lately, I’ve even begun gardening and eating at home more often. Then a combination of Top Chef, Sex and the City and an old article in Mother Earth News inspired me to try gathering my recipes into a vegetarian cookbook.”
