Poached Scottish lobster tail with lardo di colonnata, vegetables and coral vinaigrette
- Poached hen’s egg, smoked potato ravioli with parmesan emulsion and shaved white truffle
- Pig’s trotter stuffed with veal sweetbread, parsley, Dijon mustard, warm apple sauce and Waldorf salad
