Snacks are by definition, are a food for consuming between our 3 main meals. Important features focus on relieving hunger, convenience and enjoyment followed by a concern over nutrition and diet. Snack foods are now receiving more attention and some are being considered for an additional tax to reduce consumption. Pork rinds have historically been viewed as a “bad” snack without comparison to other snack foods such as chips. If your favorite snack is carrots, read no further since this information will not benefit you. But if you have a craving for a salty crunchy snack that satisfies your hunger pains read on. I have also become concerned about the amount of carbohydrates consumed in many snack foods. My spouse who has type 2 diabetes has always snacked, often selecting foods that when compared to pork rinds were not as healthy. While pork rinds were not one of her regular snacks when we developed the microwave variety they are now one of her favorites!

An article I found recently enlightened my view of pork rinds as a snack food. Men'sHealth published the following article: Junk Food that's Good for You, By: Jeff Volek, Ph.D., R.D. Jeff Volek is currently an Assistant Professor in The Human Performance Laboratory at The University of Connecticut. In the article he states “A 1-ounce serving contains zero carbohydrates, 17 grams (g) of protein, and 9 g fat. That's nine times the protein and less fat than you'll find in a serving of carb-packed potato chips. Even better, 43 percent of a pork rind's fat is unsaturated, and most of that is oleic acid—the same healthy fat found in olive oil. Another 13 percent of its fat content is stearic acid, a type of saturated fat that's considered harmless, because it doesn't raise cholesterol levels.”

The good news is that microwave pork rinds improve on these numbers. In a one ounce serving of microwave pork rinds the total fat drops from 9g to 4g. The reduction in fat is even more significant since traditional fried pork rinds are often cooked in lard. The calorie content of an ounce is 120 calories with only 30 calories coming from fat.

Food for thought when comparing similar one ounce servings:

Microwave Pork Rinds 120 calories with 30 calories from fat. Total fat is 4g, Carbohydrates 0g, and Protein 9g

Regular Microwave popcorn 128 calories with 85 calories from fat, Total fat is 10g, Carbohydrates 14g and Protein 2g.

94% Fat Free Microwave popcorn 110 calories with 14 calories from fat. Total fat is 1.5g, Carbohydrates 20g and Protein 2g.

Regular Potato Chips 160 calories with 90 calories from fat. Total fat is 10g, Carbohydrates 14g, and Protein 2g

Baked Potato Chips 110 calories with 14 calories from fat. Total fat is 8g, Carbohydrates 20g, and Protein 2g

Puffed Cheese snacks 150 calories with 72 calories from fat. Total fat is 1.5g, Carbohydrates 16g, and Protein 2g

Pretzel Sticks 100 calories with 0 calories from fat. Total fat is 0g, Carbohydrates 23g, and Protein 2g

Peanuts Dry Roasted 166 calories with 126 calories from fat. Total fat is 14g, Carbohydrates 6g, and Protein 7g

I could list more but it is important to reexamine your knowledge of the snack foods you consume. You may find as I have that microwave pork rinds are not your father's pork rinds.
