The Maine Lobster Shelf Life - Thanks to the Clean cold waters of Coastal Maine .

I have read several articles concerning the life of a lobster out of water and have found some signifagant differences between one or the other . We at Coastal Maine Seafood , often test the durabilty and quality of life of our live Maine lobster . One fact that i will stand by is that I have never had even the lowest quality lobster be un edible with in 24 hours out of water . Generally in a refrigerated environment our personal best is 7 days with our highest quality product . The average being 3 days before the lobsters were in need of cooking . Often people may think because there lobster has arrived and it is not moving that it is no good , this is simply not true . More than often the lobster is in shock from a temperature change or is in a sleep state . The best thing a person can do if they are concered is cook the lobsters righ away . A good way to revive the lobsters is to put them into a cold refrigerator and cover them with some damp towel , this will remind them of the environment they are accustumed to being in and often start moving again . In the rare case i am wrong there is still nothing wrong with cooking and eating a dead lobster . In fact many people who are a bit on the sensative side , absolutly demand the lobsters are dead before thery are thrown into a pot of boiling water because of the fear that the lobster will suffer. For years many specific retailers have been putting there lobsters into a full shock state by stunning the nerves to a point were it is certain the lobsters will not feel it when they are boiled . Personally I dont think they feel anything but i am certainly not going to argue with people who have stock in the matter. In case the lobster really is completly unedible when recieved from a lobster company it is going to be quite apparent when the lobster is cooked that the meat will not be in a solid form especially the tail as it will come out mushy and will have deteriated considerably . If The lobster was actually dead when it was cooked as long as it had not been dead for more than 5hrs and was not just laying around in the sun , there will be no difference in taste or texture .
