January 16, 2004 (Press Release) -- Toronto, Ontario (PRWEB) January 16, 2004 - It's eight P.M., the guests are arriving, the food is perfect, the wine is ... gone off. This is a common story for many downtown residents who lack the space to properly store and age their growing wine collections. Urban Cellars, downtown Toronto's first wine storage facility, has solved this dilemma by offering a month-to-month storage service dedicated exclusively to wine preservation.



Founders Chris Morris and Darren Keyes opened the facility in response to the lack of storage alternatives downtown. “We saw a need for people like ourselves, who want to expand their wine collection but have no safe place to keep it in their space-limited condos,” says Morris. He adds, “When you are talking about a 700 square foot space, where do you put something like a wine fridge?” Keyes quotes the growing number of collectors as the reason he believes the concept is relevant today. “When you have a case of $40 Cabernet Franc that should age for a minimum of 5 years, you don’t want it under your bed where it may spoil rather than mature.”



The most important factor in wine maturation is a steady temperature of 13 to 14 degrees Celsius. Wine writer Matt Kramer says, “What's wanted is what might be called a nurturing temperature: just enough warmth to allow the wine to slowly mature, but not so warm as to sap it of freshness.” Urban Cellars ensures this with a professional wine-cooling unit that is monitored daily. Other important factors including humidity, darkness, vibration and security are also controlled.



By converting units in existing storage facilities, Keyes and Morris are able to offer storage rates substantially below those offered in other metropolitan areas such as New York, San Francisco and Vancouver. Monthly rates start as low as 17c per bottle, including free home pickup. A charge of $10 plus $1 per case is charged for delivery from the cellar to the customer's home, but customers are encouraged to visit the cellar and deposit or withdraw wine as often as they like.



Having access to a professional quality cellar service opens up options for a lot of wine lovers in the Toronto area. Customers of all sophistication are welcome, whether they have one case or hundreds. "Wine collecting isn't just for Bay Street lawyers anymore - people of all income brackets are getting into wine," says Morris.
