Recently Chef Alex Rotherham went searching for places to dine later at night. On some days as early as 10:00pm and the choices were slim. After making some of these choices, and having some experience that he could best describe as “interesting”, he decided that Darby’s kitchen needs to stay open late.
So, effective immediately the kitchen at Darby’s will make last call 15 minutes before pub closing.
That is 12:45am Sunday-Thursday, and 1:45am Friday & Saturday. This will not be a reduced menu, the FULL menu will available. Including:
Chef Rotherham’s signature steaks, utilizing Canada AAA minimum 28 day aged steaks, marinated and grilled to perfection. Served with his warm potato salad, and sweet corn relish.
Darby’s Mac & Cheese with broccoli & tomatoes in a cheddar cream sauce, prepared with 3 year old cheddar, topped with fresh cut tomato salsa
Sherry Honey Turkey grilled turkey breast, steamed spinach & broccoli & grilled tomato, topped with a Honey Sherry Vinegar Reduction
Lisa’s Club this sandwich was created specially for the chef’s wife. Grilled turkey, red pepper, spinach, & maple-wood smoked bacon with a cranberry tartar served on ciabatta bread
Sweet Corn Cake Chef Rotherham’s signature dessert topped with Vanilla Mascarpone cheese, coffee caramel & toasted almonds.
Also on offer is Vancouver’s most peculiar burger, using 100% pure lean ground chuck, fresh ciabatta bread and a Dijon remoulade. You have to see it to get it…
Chef Alex Rotherham, a native of Vancouver, is proud to have developed his culinary skills right here at home. With over 19 years of kitchen experience, nearly 17 of those years were spent working in Vancouver. He received his formal culinary training at Vancouver Community College, and is a member of the British Columbia Chef’s Association.
