An easy way to tighten your belt this holiday

Tired of celebrating the holidays with the same old turkey dinner, but hesitant to remove this protein source from the holiday menu? Try Vitasoy tofu! Tofu offers the full protein that turkey dinners have traditionally provided, and is an inexpensive way to add flare to a variety of holiday favourites and some exciting new alternatives.
“Tofu is a great alternative or recipe add-on. It is low in saturated fat and calories while high in protein, helping you lose weight, not muscle. The high protein content satisfies hunger longer and contains important omega-3 and omega 6 fatty acids,” explains Jennifer Sygo, M.Sc., RD, a Toronto-based dietitian. “What’s more, incorporating plant-based soy foods into your diet may improve blood pressure and reduce other risk factors such as coronary heart disease.”
Here are some easy ways to add tofu to your holiday meal:
Appetizer: Vegetarian Artichoke Dip
Ingredients
1 12-oz. pkg. Sansui® silken tofu
2 tablespoons Nasoya® Nayonaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
2 cloves garlic, minced (about 2 teaspoon)
1/2 teaspoon onion powder
1 15.5-oz. can artichoke quarters in water, drained, rinsed, chopped
1 cup frozen chopped spinach, thawed and squeezed dry
1/2 cup grated Parmesan cheese
Paprika for dusting
Preparation
1. Preheat oven to 400F. Purée tofu, mayonnaise, mustard, lemon juice, garlic and onion powder in blender or food processor until smooth. Transfer to bowl.
2. Stir artichokes, spinach and Parmesan cheese into tofu mixture. Spoon into 8-inch glass pie dish or casserole.
3. Bake 20 minutes. Dust with paprika; serve.
Dessert: Silken Chocolate Mousse
Ingredients
1 lb Sansui® silken tofu
1-1/2 cup dairy-free chocolate chips, melted
1/3 cup pure maple syrup
2 tsp vanilla extract
1 tablespoon almond liqueur or 1/4 tsp almond extract (optional)
Preparation
1. Blend tofu in food processor until completely smooth, about 2 minutes.
2. Blend in melted chocolate chips, maple syrup, vanilla, and almond liquor.
3. Portion into 6 serving bowls or glasses. Cover the top of each with plastic wrap and refrigerate at least 2 hours before serving.
Note: Melt chocolate chips in a double boiler, stirring constantly to prevent burning, or in the microwave, on the defrost setting for approximately 3 minutes. Stop to stir at least once.
Holiday Drink: White Russian
Ingredients
¾ oz. vodka
¾ oz. Kahlua liqueur
1 ½ oz. Vitasoy® Vanilla soy beverage
Preparation
Add ice, mix and enjoy!
