Henderiks, R.D., founder of “Dietitian in the Kitchen”™ (www.ditkonline.com) has accepted the challenged from CBS’ the Early Show producers of “Chef on a Shoestring” to prepare a three-course delicious and healthy meal for four people for under $35. She will appear on CBS News Saturday, January 3, 2009, at 8:45AM. Henderiks, a registered dietitian, is a leading U.S. nutritionist, culinary educator, fitness expert, cookbook author and corporate nutritional consultant.

Henderiks will prepare a healthy three-course Mexican fiesta feast including: Mango Guacalmole with oven-baked fiery tortilla chips; Chicken Chili Rellenos with mixed bean and corn salsa; and Pina Colada Sundaes. ~ a delicious and nutritious meal for under $35 on CBS News “Chef on a Shoestring” segment of the Early Show.
