America's original Barbecue and marinade sauce just got a green makeover. Since folks first settled the Carolina coast, Eastern North Carolina barbecue sauce has been famous for its thin (not thick), tart vinegar base and spicy, peppery tang. Julia's Pantry has introduced a Carolina Sassy Sauce packet that ships without the vinegar and the bottle. According to Reta this opens the door to making your own special sauce based on a tried and proven recipe. Historically apple cider vinegar was readily available and used as the base for the sauce and applied liberally to smoked pork barbecue. Reta demonstrated the flexibility when other vinegars are introduced to these spices and challenged us to try mixing it with something a little more daring like a balsamic, pear, rice or red wine vinegar. Why stop at pork or chicken, marinade your next steak and you will find the possibilities are only limited by your imagination and your taste buds! She concluded her demonstration by stating that Carolina Sassy Sauce is all natural, gluten free and contains no preservatives.
